The Green Heart of Trás-os-Montes

On the silent slopes of Trás-os-Montes, where time moves slowly and the wind whispers ancient secrets among centuries-old olive trees, a thread of golden soul is born: olive oil. It is not just an ingredient—it is liquid poetry, a centuries-old legacy, an embrace from the land to the table.

Since the time when the Romans walked these schist-covered grounds (Silva & Gomes, 2015), olive trees have sunk deep roots into these rugged hills. Cobrançosa, Verdeal Transmontana, Madural—names that sound like rustic music, native varieties that transform sun, cold, and silence into a fruity flavor, lightly bitter and spicy, carrying the complexity of a life deeply lived.

It is said that the olive tree belongs to both gods and men. And perhaps for that reason, in Trás-os-Montes, olive oil is not just nourishment, but identity. And at the table, the miracle continues. Rich in antioxidants and healthy fatty acids, olive oil nurtures both heart and spirit (Covas, 2007). It transforms the simple into the sublime. It nourishes with lightness, enhances flavor, and teaches us to eat with intention, with soul, with truth.

Thus, Trás-os-Montes offers us a gift with deep roots and branches reaching toward the sky. An olive oil that serves as a bridge between generations, a testimony of a people, and a promise of a greener, fairer, more human tomorrow.
